Claire Criscuolo is the founder and proprietor of legendary health food emporium Claire's Corner Copia, in New Haven, Connecticut (<a href="http://www.clairescornercopia.com">www.clairescornercopia.com</a>), and as she nears the restaurant's 35th Anniversary in September, she wants to deliver a message to the rest of the world: Healthy doesn't have to hurt.<br />
<br />
"For more than three decades, we've been working on creating healthy foods that don't taste like healthy foods," Criscuolo said. "When most people think of health foods, they think of bland, gritty or virtually tasteless substitutes for the fatty, unhealthy foods they'd prefer to eat. Instead, we don't try to imitate anything - all our recipes and dishes are created from scratch, with originality and creativity. We work hard to buy sustainable and organic ingredients because we think we should take as much care in preparing our menu items as people should be taking in their health and diets. For instance, we eliminated trans fats from our menus in 2001, replacing shortenings in our pie crusts with organic and trans fat free and our pie crusts remain tender yet flaky, the way most people like them."<br />
<br />
Criscuolo's gourmet vegetarian restaurant, a hub of the healthy eating population worldwide, opened in 1975, and probably owes its being a few years ahead of its time to being close to Yale University's progressive campus. The restaurant was handicapped accessible long before the law mandated it, eliminated trans fats from its menu before most people knew what they were, before accessibility laws were enacted, was declared kosher nearly a decade ago and has had a Braille version of its menu since the 1980s.<br />

"Popular foods that are loaded with delicious and healthy vegetables include comfort foods, like stuffed peppers, vegetable pot pies, and our Portobello stacks with braised organic baby spinach, sun-dried tomato pesto, and feta cheese," Criscuolo said. "Our Quesadilla Zio Javier has organic black beans, tomatoes, chili peppers, onions, and salsa verde with organic avocado, and we make our own veggie burgers. We make a Greek Veggie Burger with organic oats and brown rice, carrots, walnuts, onions, mushrooms, and we top it feta, cucumber, and yogurt. It's all healthy, but it all tastes like the richest gourmet fare."<br />

With entrees like that, there's room for a little indulgence with Claire's world famous Lithuanian Coffee Cake, a signature staple of Claire's menu.<br />

"Our Lithuanian Coffee Cake started out with the name, Sally Tessler's Mother's Coffee Cake, because the base recipe started out as our beloved employees Mom's family recipe," Criscuolo said. "I added coffee and vanilla to the batter and added coffee grounds and brown sugar and walnuts to the filling. After a short while, we realized the name was a bit lengthy and I wanted to name it after the place Sally's Mom's family came from; Sally told me that her Mom's family came from what was Lithuania, and at the time that was part of the Soviet bloc. Well, I suggested we help the &#8216;revolution' with the cake and declare it Lithuanian Coffee Cake. I wish democracy came that easily, but Sally loved the idea and years later when Lithuania became  an independent country once again, she called to ask &#8216;So what do you think, did the Lithuanian Coffee Cake have anything to do with the freedom?'" ]]></description>

<description><![CDATA[ The concept of the show is right out of professional wrestling, but there it is in living color every week on 'The Food Network'.  Prominent chefs from all over the world go 'mano a mano' in judged cooking competitions.  That's the premise of 'Iron Chef' which is easily the most entertaining cooking show in television history.  Even non-foodies will enjoy the competition and the nearly inscrutable strangeness of the show.<br /><br />The story behind the show goes something like this"theres this rich dude, MC Kaga who summons the finest chefs in Japan to do battle in his kitchen stadium.  Needless to say, a TV studio wouldnt suffice for such a production:  the kitchen stadium is in Kagas castle.  Also in residence are three Iron Chefs, each representing a different type of cuisine (Chinese, French and Japanese).  The summoned culinary challenger picks which Iron Chef he wants to take a crack at and the contest begins.  The show was originally created by the Fuji TV network in the Japan, and the original Japanese title translates literally to The Iron Men of Cooking.<br /><br />Adding even more 'spice' to the show--each dish must include the 'theme ingredient' which is kept a mystery until immediately before the competition begins.  With great pomp and amid smoke and pyrotechnics, Kaga reveals the 'mystery ingredient'.  Sometimes it'll be something basic like apples or tofu, other times it's more obscure like ox tail or some otherworldly shellfish.<br /><br />The chefs then have an hour to prepare a seven-course meal to be served to a panel of what I presume to be mid-level Japanese celebrities.  They rate and discuss each participants offering and pick a winner. At the end of the show with much fan fare Kaga reveals the winner.  Its a great honor to beat one of the Iron Chefs, though its no easy feat.<br /><br />What really brings the show together is the announcing. Theres a hysterical play by play announcer, an excitable color commentator, and an even more hyperactive sideline correspondent who will break in the commentary frequently with revelations such as observing that a chef is using fresh ginger in a dish or some similar piece of trivia.  Apparently one of the announcers is a legit sumo wrestling announcer in Japan, making the strange juxtaposition between cooking shows and wrestling even more complete.<br /><br />The dishes that are presented are always amazing and creative.  Sometimes they might not be the most appetizing creations, but that's to be expected when you have to make a desert with something like pickled carp as a theme ingredient.  The creative process and the competition is what makes the show a must watch.<br /><br />The Food Network has recently begun production of a native grown version called 'Iron Chef America'.  It has a similar format, but really loses a lot from the inscrutable original. ]]></description>

<description><![CDATA[ My favorite meal is shrimp scampi.  There isn't anything more delicious than shrimp scampi.  It's quick, but looks and tastes like it took forever to make.  You can serve it by itself or add it to pasta.  Linguini is my favorite to have with shrimp scampi.  The thicker noodles soak up all of the delicious flavors.  I've tried other noodles, but you can't beat linguine.<br /><br />I have one secret ingredient: offshore shrimp...shhh.<br /><br />I have one strict rule: I use only Wild United States Shrimp, from the gulf coast or the southern Atlantic Ocean. Surprisingly, shrimp eaten in the United States are raised in either Asia or Latin America.  Foreign shrimp simply do not taste as good as shrimp from the United States.  Once you try US wild shrimp, you'll never have foreign again.<br /><br />I discovered that 90% of shrimp consumed in America is foreign raised on farms in Southeast Asia, East Asia, South Asia and South America. The United States shrimper simply cannot compete with the flood of farmed raised shrimp that is shipped into the United States.  Foreign shrimp just tastes awful.<br /><br />However, Wild American Shrimp is catching on in the U.S., so you won't be alone in requesting and only eating american wild shrimp.<br /><br />Foreign shrimp have large amounts of fungicides, antibiotics, pesticides and algaecides in them, while Wild American shrimp feed on plankton and other protein sources in its own natural environment. They are more nutritious and have a more flavorful taste than their Asian or Latin American cousins. Simply cook both American Wild Shrimp and foreign shrimp and eat them. Much like all wild food, wild shrimp will win the taste test hands down!<br /><br />Besides the chemicals introduced to foreign shrimp as they are grown in earthen ponds, much of the shrimp are raised on grained based food. This gives them a bland taste compared to the products harvested off the southern shores of the United States.  Even if you try to spice up the shrimp, it won't matter.<br /><br />So, there you have it!  Wild shrimp off the coast is the best.  Fresh pasta is also the best...especially, when added to shrimp scampi.  In twenty minutes, you'll have shrimp scampi and add a simple salad to your meal and you'll have a great dinner that everybody will love. ]]></description>

<description><![CDATA[ When asked about what you think of when some one says &#8216;Cornwall' you are more than likely to get &#8216;Cream teas', &#8216;Cornish Pasties' and the &#8216;Eden Project' as a response. Yet Cornwall has a well established industry that is making its way to the top of the food chain. A popular export for Cornwall is Cheese. The area boasts several cheese makers and each one offering something a little unique. This article will look at some of the makers of cheese and provide you with a little bit more information about what you can expect. <br />
<br />
The first cheese on our list is that of Cornish Yarg. This is a moist cheese from Cornwall and has a fresh and creamy taste. Yet the most unique thing about this cheese is that it has been hand covered in nettles. This wonderfully bizarre cheese is a welcome sight from the cheddars that occupy the supermarket shelves.  Produced at Lynher Dairies the makers note that the cheese is naturally ripened which enables the cheese to produce rinds and molds that vary in colour from a dusty white for the younger ones to a yellow/brown mold as the cheese matures all of which is a completely natural stage and bares no difference to the flavor of the cheese.<br />

Cheese two is produced by Cornish Country Land and is called Village Green. This is an award winning hard goats cheese made with 100% goats milk sourced from their regular farm suppliers. The cheese is matured for at least 6 months and offers a clean, fruity and full bodied flavor with a smooth slightly crumbly texture.  The cheese is onluy made using 100% natural ingredients and provides a great alternative to people to don't enjoy or choose to avoid cows milk cheese. <br />

The third cheese on our list is the Cornish Blue Cheese. Made by skilled cheese makers in Cornwall from the Cornish Cheese Company this is a delightful addition to our cheese list. The process is entirely hand made and one element requires the cheese to be matured for 12 to 14 weeks. The bluing of the cheese occurs when the cheese is pierced each week with stainless steel rods allowing the mould to spread through out the cheese. This is a must for anyone who likes the taste of blue cheese. <br />
